Would anyone be interested in dropping by Kent's place to get the malts? I'm sure he'd have some on hand. Alternatively I can stop in Dave's I know he has fresh Pils malt on hand but as far as the wheat I think he has it in 25 lb bags and I'm not sure he has 2 (think I saw 1 last I was in there), but I'll check tomorrow.

I can stop by Kent's this Saturday to pick up the malt.

I might have missed it in prior threads but where will the barrel be housed?

Are we splitting the malt cost based on volume brewed?

Dave only has 1 25 lb sack of briess flaked red wheat. It's $27. Several sacks of Pils malt available. Avangard Pils 55 lb $33.69, MFB Pils 55 lb $50.37, Best Malz Pils 55 lb $49.50.

I'm thinking it's the Alhambra wheat, which I'm not sure if we want to use or not. It's locally grown. Lower in protein content and not sure what kind of affect its gonna have on our brew really. Kent said he could get a sack of oio flaked wheat for us by the picnic which I think is more like what we need, it's more expensive though of course. Let me know what you guys wanna do.

I'm gonna tell Kent we need a 55lb sack of OiO flaked wheat. He needs to know soon to get it to us by the picnic. Looking to pick it up and I'll bring it down with me. Also I'll pick up a sack of the European Pils malt from Dave Brewer over at BTVH. Just wanna confirm with you guys you're OK with this as far as cost probably something like $110ish but will have an exact amt in a little bit.

Ok so talked with Eric and found out he already picked up the 55lb sack of wheat. Looks like we only need the Pils malt which I will be picking up tomorrow. Looks like we're good to go yo. Cheers! See you guys on Saturday with all the ingredients in tow. Bring yo cash!

Just to make sure everyone knows. The Pils malt, wheat and aged hops will be brought to the picnic this Saturday to be split up. The barrel will be emptied on Sunday. I'd like to have the barrel filled by Memorial day so if everyone could brew for this project sometime next week. The barrel may be either kept in my basement or Nicks I will keep you updated as soon as we determine where it's going exactly.

It would be a good idea to have some rice hulls on hand for this brew day just in case as we are using unmalted raw wheat now for a large percentage of the grist.

So the barrel did fit in my basement out here in St Peters, just barely I might add. Also I think there is about a gallon or 2 or beer left in it which is just fine.

Ryan, I'm brewing this Saturday. When are you going to be available for me to transfer my 5 gallons? Also, I want to confirm that we are holding off on pitching the Chico yeast until in the barrel.

As far as mash schedule I know historically brewers would employ a turbid mash with these beers, it's something kind of similar to a decoction mash but it's even more complicated. I think we should keep this simpler but we'll still need to do a step mash. Here's what I was thinking of doing:

113F dough-in (acid/beta-glucan) 15 minutes
122F (Protein. Peptidase/Protease) 15 minutes
138F (Protein. Sacc. Beta-amylase) 30 minutes
150F (Sacc. Beta/Alpha-amylase) 30 minutes
162F (Sacc. Alpha-amylase) 30 minutes
168F (Mash out) 15-20 minutes

Sparge with 190F water.

90 minute boil, adding the hops at the beginning of the boil.

I'll probably be stirring in about a pound of rice hulls prior to sparging, also as far as aged hops I'll be adding at a rate of 3oz per 5 gallon, so 9oz total and these will be boiled for the full 90 minutes.

I'll let you guys know how his turns out as I think I'm going to be the first to brew for this project.
