When/where is this supposed to happen?

Brew date/time is TBD. This is a 60 gallon oak wine barrel that is currently over at Jacob's place and filled with BDS, want to fill it with lambic.

Ryan,

So it's going to soak for a long while. I'm guessing BDS is a stout?

What bacteria will the beer be innoculated with?

How many guys have signed on so far? My experience to date has been the more folks involved the longer it takes to get things done.

Eric what does the next few weeks look like for you. I know Patrick said he'd be able to brew around then. I'd very much like to get the barrel filled before the picnic. Can you see if you can get like a sanitized 1 gal growler of chico yeast from Modern? I met the brewer from 2 Plumbers I could try to hit him up for yeast but I have no idea what kind of yeast they're using over there.

Here are the brewers we have so far on this project and how much wort they said they could make for it :

Ryan (Me) - 15 gal
Nick - 10 gal
Patrick - 5 gal
Eric - 15 gal
Jason - 10 gal

That gives us 55 gallons which is good if we are going to ferment in the barrel as it will give some space for kraeusen, we'll probably need to have a 5 gal bucket for a blowoff.

For the recipe 40-50% unmalted wheat with the rest pils malt. A rest in the protein range, then saccharification and mash out. I have the old AB hops I can bring them to the meeting this Thursday. I have several trash bags full of them from as far back as 2012.

It's a Lambic so expect 12 months or more.

Jacob wants to empty the barrel on the 21st. Can you guys brew for this then within a week after that? Don't want to leave the barrel empty for too long. Any update on chico yeast from Modern? Think we might need to order a sack of Pils and a sack of unmalted wheat from either Kent or Dave. If we can have all ingredients ready at the picnic then we can split em up then, I'll bring the old hops.

Yeah, I can still put in 10 gallons. I will hold the day after the picnic to brew, and I can get the beer over a few days afterwards. I'll be out of the state for a good chunk of June and July.

Any updates on the ingredients? I'll definitely need to grab the hops from Ryan at the picnic. Should I also plan to source the yeast and wheat malt?

What was the OG on this recipe again?

I can schedule a brew for Labor Day Weekend. I am limited to 5 gals and a single infusion mash. I assume that we will brew remotely then bring the wort to wherever the barrel will be stored?

OK how about OG 1.052. I did a rough calculation for grain bill I just assumed 75% efficiency, went with Pils 55% Wheat 45%. Went for a target post-boil size of 60 gallons, so I figure we'll lose about a gallon from each brewers system for a total of 55 gallons in the barrel.

Pils 55% 37.5ppg
Unmalted Wheat 45% 37ppg

52 * 60 gal = 3120 pts

(3120)/((37.5 * .75)*0.55 + (37 * .75)*0.45) = 111.6 lbs

111.6 * .55 = 61.4 lbs
111.6 * .45 = 50.2 lbs

So we'd need about 60 lbs of Pils and 50 lbs of unmalted wheat.

I am thinking we fill the barrel by the following weekend after it's emptied which is memorial day weekend. If some brewers have wort in the barrel before then that is ok. We can pitch the chico yeast after all the worts are combined and then after a little while look at adding some commercial lambic blends.
