Get out the Stuykmanden - Traditional Lambic Sour Beer

Postby stlmalt » Tue Aug 20, 2019 5:10 pm

We are looking for a brewer to brew and contribute the last 12 gallons of a traditional lambic to fill a 53 gallon group project soured barrel. This barrel has been barrel aging various beers since 2011 and the current beer (traditional lambic) is ready to come out and a new batch to go in.

Who: Brewer that is willing to brew 12 gallons of a traditional lambic following a provided recipe that uses a grain bill of Pilsner malt and unmalted wheat with a turbid mash step using your stuykmanden. Souring culture can be WY3278 or WLP655 or WLP665.

What: Brewer to brew a traditional lambic and contribute 12 gallons to fill the barrel. You of course will receive the 12 gallons back minus the angel's share after the beer has aged and soured itself into range.

When: You can volunteer now and brew soon.

How and why: Already covered.

If you are interested in brewing for the barrel the recipe is below. Gravity is a bit higher than BJCP guidelines but seems to work well for barrel aging.

Kent, obviously I can't brew a batch and get it to you from Michigan but would love to try the recipe if you can post it!

The barrel was changed over on Saturday, October 5. We could use a brewer to brew and contribute 8 - 9 gallons of the traditional lambic recipe in order to completely fill the JD whiskey barrel. If read this post and are interested in participating in this barrel project, please contact me.
