Eric is going to be sourcing some Chico yeast from Ronnie over at Modern which he'll be bringing over with his wort, this will be fermented in the barrel.

OG was about 1.055. 58 gallons in the barrel. Yeast was pitched Wednesday night 5/31/17. Fermentation went right off and was vigorous, a 5 gallon bucket for blow-off was needed. The wort tasted sweet and had no bitterness. The pH was not measured (forgot). I have 5 packs of Wyeast Lambic blend which will be going into the barrel soon, waiting for the primary ferment to slow down a bit. I plan to add a Vinnie nail to the barrel and taste it periodically after that. Also may have to top up the barrel down the road with some more wort.

I'm grateful you organized, Ryan. When do you plan to take the next gravity and pH reading after pitching the lambic blend?

I pitched the 5 packs of lambic blend on Thursday night 6/8/2017. I didn't take gravity readings or anything. I'll post again sometime in the future, but for now we just have to wait. :D
