I tasted a Polaris Hop Trial at the Schlafly Bottleworks Cask Night yesterday.
Polaris is a new dual-purpose high-alpha hop variety bred in Germany. Its profile was very surprising. None of the black peppery and grassy aspects I associate with German noble varieties, and none of the grapefruit and pine aspects I associate with American high-alpha varieties, this beer featured lots of ripe fruit flavours, apricot, melon, mango, passion fruit, with some oily resin and strong whiffs of honey, wildflowers, weeds. Smooth and harmonious. I see Schlafly is blending Polaris into their latest Double IPA at the Tap Room too.
