Super Wheaty Hefe

I brewed an all-grain hefe a few weeks back, recipe below. The issue is that it has a tremendousn wheat character to it. I have brewed this numerous times the same way. Any thoughts? Its not a bad beer but the wheat covers up some of the banana notes.

Thanks for your input and advice on not repeating it :wink: !

Bob

6 lbs wheat
4 lbs 2-row
0.5 oz northern brewer hops for 60 min
1 smack pack of Weinhestephaner east

Mashed at 158 - 155 over 60 min

Batch sparged x 2 with ~2 gal each time

Fermented at ~68-70 oF for 7 days

On Tap 1:Pliny the Elder Clone
On Tap 2: Coors Light :roll:
On Tap 3: Hefeweizen
On Deck: Corona clone

Good question. I wonder if the time of year and the quality of the water makes a difference? Regarding the wheat, did you change brands?

Not much, just a couple of thoughts.
Serving - Dark Medicine, JD Bigfoot Barleywine Clone, JD RIS (jealous?), American Wheat Ale, Nut Brown Ale, & Blondes...
